As a quick solution for documentation I would suggest using a private repo on GitLab, with markdown files. For example the mastodon docs are stored in markdown files: https://github.com/mastodon/documentation/tree/master/content/en/admin Maybe we can also use MkDocs (https://www.mkdocs.org/) which is still based on markdown files. If you don't like GitHub/GitLab, a nice self-hosted solution is Gitea ( https://gitea.io/), which is very easy to install.
I would recommend against using a wiki (for example mediawiki) for documentation purposes, because they often save the content in a database, not in plain text files. Text files (for example in markdown format) have the advantage of being able to store in a Git repo, with version control, pull-requests, etc.
