Does someone have any suggestion, which FLOSS UML tools we should have a look at?

If your focus lays on the (Enterprise) Architecture of IT-Systems you can give a look also to the Archimate Modelling Language (https://en.wikipedia.org/wiki/ArchiMate) as an alternative to UML, and to the Archi Tool.. (https://www.archimatetool.com/)

I used https://plantuml.com/ in the past. It's different, since it creates the graphical representation from a textual markup.
